Vegeterian Stuffed Bell Peppers?


I am cooking dinner tomorrow night for my fiance’s parents, his brother, and his brothers girldfriend.

I am planning on making stuffed bell peppers. She is not fond of red meat, but not a vegeterian. But I thought I would make one meat free for her.

Inside the pepper is going to be:
ground beef
rice
tomato sauce
parmesean cheese
spices

What should I replace the ground beef with for the veggie one?

I was thinking some kind of bean?
I’m kind of leaning away from pinto or black just because they will be covered with more tomato sauce and cheese, and I think mexican food when I think of black or pinto beans.
So anyway, I am thinking kidney beans might be a good choice.

What do you all think? Do you have any good ideas?

Oh and I have never cooked tofu before and I always like to do a test run with things I have never cooked before. So we’ll just save that for another time when I have more time to prepare.
