This was on Rachel Ray today, & I fixed it for dinner. Friggin’ awesome! (you can halve the recipe if there is just the two of you)

Crispy Parm-Crusted Filet of Fish and Buttery Bowties with Peas

Ing:
* 1 1/2 cups all-purpose flour
* 1 tablespoon Old Bay seasoning (or other fish seasoning)
* 3 eggs
* 4 6-ounce filets of tilapia or sole
* 2 cups breadcrumbs or crushed crackers
* 3/4 cup grated Parmigiano Reggiano, divided
* 1 tablespoon thyme, finely chopped
* Zest of 2 lemons, then cut into wedges, divided
* 1 box bow tie pasta
* 6 tablespoons EVOO – Extra Virgin Olive Oil, divided
* 1 large onion, finely chopped
* 3 cloves garlic, finely chopped or grated
* 1 cup frozen peas, defrosted
* 3 tablespoons butter
* 3 sprigs mint, chopped
* 1/4 cup parsley, chopped
* Salt and ground pepper
* 1 head butter lettuce, for garnish

Prep:
Preheat oven 250˚F.

Set up three dishes for breading the filets: In the first, combine the flour with the Old Bay. In the second, beat the eggs with a splash of water. In the third, combine the breadcrumbs, 1/2 cup Parmigiano, thyme and lemon zest. Dip each fish filet first in the flour mixture, then the egg and finally in the breadcrumbs. Place the coated filets on to a sheet try and reserve.

Bring a large pot of water to a boil over high heat. Once boiling, add some salt and drop the pasta. Cook to al dente, according to box directions.

While the pasta is cooking, preheat a large skillet over medium heat with 2 tablespoons EVOO. Add the onions and garlic to the hot skillet, and cook until tender.

Preheat a large skillet with about 4 tablespoons EVOO and sauté the first two fish filets until golden brown, about 2 minutes per side. Once the first two fish filets, place them in the hot oven to keep warm while you cook up the other two.

While you are cooking up the fish, add the peas and butter to the skillet with the onions and garlic. Ladle a spoonful of some of the pasta cooking liquid to the peas, remove from heat and toss in the mint and parsley.

When the pasta is done, drain it well and return it to the pot it was cooked in. Add the peas and sauce to the cooked bow ties then season with some a bit of salt, pepper and the remaining Parmigiano.

To serve, place 1 or 2 leaves of butter lettuce inside each serving bowl then fill the lettuce cup with some buttery bowtie pasta with peas. Plate the fish on a separate large serving platter with lemon wedges alongside.

Stir fry! You can make yours with just veggies, I have had it that way because I forgot to cook the meat one day lol, I had a moment. But anywho, if your hubby likes meat, cut up some steak like meat and cook it with it, or our fav (My hubby’s and I) is chicken! Yummy!! But stir-fry is super quick and easy. Have your hubby help you cut the veggies. I usually use green peppers, red peppers, shredded carrots, mushrooms, broccoli, onions, pineapples (we love it that way), almost anything you really like! I add a bit of oil to a big skillet, or a Wak, which are really nice, and then brown up your meat, then add the veggies. We add a tad of soy sauce, make some white rice and yum yum! You could always cook your meat separately since you don’t eat it, and then your honey could add it in with some veggies in the meat pan :-) We also make homemade egg rolls, and once I was courageous and made crab rangoons too! lol. Be creative, and if you want more recipes, Google them..Good luck though and have fun!

Make soup together.Chopping up the veggies and making a broth makes it something that brings you closer together in the kitchen.
First make a base broth,celery,onions,carrots and herbs of your choice,boil it down for about an hour and then strain the solids from the broth.Now add fresh veggies that you prepare together,add rice or pastaCanned and drained cannieli bean too,some zuchinni and yellow squash,.Simmer just enough to get them tender crisp.Top with shaved parmesen and a toast to each other with champagne.Enjoy….

You could make stuffed shells and serve with extra sauce and brown some Italian sausage in his sauce on the side. Stuff the shells with a combination of ricotta, mazzarella and parmesan cheeses. Put some Classico sauce in the bottom of a baking dish then add the individual stuffed shells, put a little sauce on them and bake for 30 to 40 minutes at 325 F. Serve with extra sauce and browned sausage links – I like to cut them in half.

Serve with garlic bread and a nice salad. This way he can have some meat with the sausage but you’re both eating the same meal.

Here is one of my hubby’s favorite vegetarian recipes:

Lightly Curried Carrot Soup

2tsp vegetable oil
2 cloves garlic, minced
1 onion, chopped
2 TBsp minced ginger (use FRESH!!!)
1 tsp ground coriander
1/2 tsp ground cumin

1/4 tsp each curry powder, salt, pepper
3 cups vegetable broth
4 cups thickly sliced, peeled carrots (those baby ones work too)
2 cups 2% milk (or 1/3 cup each milk, plain yogurt, coconut milk)
1/4 cup chopped fresh coriander, cilantro or parsley

In a saucepan, heat oil over medium heat; cook garlic, onion, ginger
and spices. Cook until onion softened. Stir in carrots. Pour in
stock and boil. Reduce heat and simmer covered for 30 minutes until
carrots soft.

In batches, puree mixture in blender return to pan and whisk in milk
and reheat till hot. Stir in salt and pepper. Makes 6 servings.
Garnish with plain yogurt and cilantro.

get out a flat skillet and butter, i cut up veggies, sea food and chicken maybe some meat as well. turn it on high and cook away, i use tortillas and make small tacos or burritos, cheese salsa, what ever, cook as little or as much as you want. my kids love it, cuz they think its fun and cool ….

oh ya….use the plug in kind of skillet its 10″x 18″
